Hygrometry is the level of relative humidity in the air (not to be confused with condensation). The hygrometry of a cabinet should be 50 – 80%. Absence or insufficiency of hygrometry can result in the air drying out and therefore the cork, thereby allowing wine to penetrate the cork, resulting in the famous and irreparable oxidised taste.
